Tips for sugar-free* baking:
(*Technically, no sugar added, since some contain natural fruit sugars.)

preserving fruit-sweetened foods:

...When waiting one or more days to finish serving fruit-sweetened foods, refrigerate them, so the fruit does not ferment. Some of the muffins or breads can sit out one or two days if the weather isn't warm. Just be aware and cautious.

any time you experiment with revising a recipe:
...Expect to do some tinkering, so cut the recipe to a smaller quantity while you're still experimenting.

modifying sugar sweetened recipes by substituting fruit juice concentrate:
...Look for any liquid, such as milk or water, which you could replace with the juice concentrate.
...Also, consider that you may need to offset the moisture by increasing your dry ingredients or substituting some oats or oat flour, which absorbs the moisture readily.
...In addition, you may have more success with muffins than coffee cake or cupcakes than sheet cake, simply because the degree of moisture is more likely to be uniform throughout.

Apricot Oat Muffins are a hearty sweet muffin, flavorful enough to serve without butter. Try these with an egg breakfast, a ham dinner, or just as a pick-me-up snack.

Banana Cream Pie (11/96)
This Banana Cream Pie is probably the easiest to make, and my guests always rave about it. If they only knew! (Actually, usually I wimp out and tell them how easy it is to make.)

Banana Milkshake (10/96)
Banana is my personal favorite of the shakes: thick and sweet.

Bavarian Cream Pie  (11/98)
Bavarian Cream Pie is made especially light and sweet by the addition of meringue.

Blueberry Lemon Pie (12/95)
This pie is one of my personal favorites. Many of my pie recipes are much quicker to assemble, but this pie... You just have to taste it to see what I mean... :-)

Blueberry Yogurt Pie  (11/98)
This pie is light and cool on a warm summer day. Leave out the Splenda® if you prefer an entirely fruit-sweetened treat. Enjoy just the creamy filling without the pie crust if you are watching your fat content.

Branapple Muffins (12/95)
When you taste these flavorful, moist, light muffins, you'll be amazed that they are also low calorie and low fat.

Butter Pecan Cookies (8/96)
This versatile cookie recipe is rich in butter and sweetened with dates. If you're watching your diet, look for another recipe. If you're ready to treat yourself, dig in! This is a fun recipe to experiment with alternative touches. Instead of using jam or pecans on top, try mixing in chocolate chunks or raisins or even quick oats.

Carrot Cake (12/95)
Two layers of our wedding cake used this recipe and received accolades! It's my favorite cake recipe. Topping it with my Cream Cheese Frosting is its crowning glory.

Chocolate Covered Cherry Pie (11/96)
Chocolate Covered Cherry Pie is as easy to make as the banana cream pie, but a little sweeter. If you "cheat" like I do and keep premade crusts in your refrigerator, you can throw this together on a moment's notice.

Chocolate Pineapple Dessert  (11/98)
Chocolate Pineapple Dessert (A.K.A. Hawaiian Delight) is a rich dessert which uses my Cookie Crust for a base. Great for a cold winter day potluck.

Chocolate Raspberry Mousse (9/96)
Chocolate Raspberry Mousse uses fresh raspberries along with chocolate and whipping cream for a decadent tasting dessert. Your guests will never believe it's sugar-free! This dessert tops the list among my church friends on potluck Sunday.

Chocolate Raspberry Cream Pie (11/96)
Chocolate Raspberry Cream Pie is a cinch to make, and a tempting taste treat.

Cookie Crust  (11/98)
This Cookie Crust is an alternative crust made with biscuit mix, dates, egg whites, and butter. It has a sweet, rich flavor, yet less fat than in a standard pie crust. I use it in a number of my ooey-gooey desserts.

Cran-Orange Oat Muffins (8/96)
Cran-Orange Oat Muffins make a fine breakfast food or an excellent complement to a ham or turkey dinner. Like the Marmalade Oat Muffins, these are flavorful without butter or margarine. Since the dry ingredients are similar to the Marmalade Oat recipe, I often make both recipes to give a nice variety.

Cream Cheese Frosting (12/95)
This frosting is superb on the carrot cake! It can also be used to turn the Marmalade Oat Muffins into a cupcake.

Frosty Cherry Pie (10/97)
As cherry flavored as you'll ever find in a pie, this dessert is great on a summer day. Or serve it as a gelatin without the crust for a low fat dessert.

Frosty Lemon Pie (8/96)
If you like tang, you'll love this Frosty Lemon Pie. If you prefer a less dramatic lemon flavor, the lemon mellows the second day. Of the frosty pies, this requires the least time to prepare, since there is no fruit to wash and slice.

Frosty Raspberry Pie (10/97)
A quick dessert, refreshing on a warm day. This filling would also be good as a gelatin dessert without the pie crust. Something to consider if you're watching your fat intake.

Frosty Strawberry Pie (12/95)
Like the Frosty Raspberry Pie, this would make a fine low fat gelatin dessert without the pie crust.

Glazed Blackberry Pie (10/97)
After a nice walk blackberry picking in the hot summer sun, this cool glazed pie is perfect to keep the house cool and your company refreshed. The blackberries can be replaced with marionberries or boysenberries.

Lemon Meringue Pie  (11/98)
A classic, this Lemon Meringue Pie sports a tangy lemon flavor with significantly less sweetening than a traditional Lemon Meringue.

Marmalade Oat Muffins (12/95)
If you're watching your fat intake, try these without butter or margarine. They are a flavorful and hearty breakfast food. An alternative is to serve these with Cream Cheese Frosting as a cupcake.

Mincemeat Pie (12/95)
This pie duplicates the mincemeat flavor without anything unhealthy. It is, however, quite sweet ...perhaps too much for a diabetic.

Old Fashioned Blackberry Cobbler  (11/98)
This cobbler recipe works equally well with blueberries, marionberries, or boysenberries. The cobbler dough is a great alternative to using a higher fat pie crust.


Peanut Butter Cookies (10/97)
A variation on the Butter Pecan Cookies, these cookies are a little less sweet while providing that peanut buttery taste.

Peanut Butter "Pie"  (11/98)
Peanut Butter Pie is a hearty dessert, including bananas for a nice taste combination and a cookie crust for a sweet touch.

Pear Spice Muffins (8/96)
These are a great alternative to the Branapple Muffins when you're in a rush. The recipe is similar but uses canned pears. No peeling those apples! (:>)

Pine-Orange Oat Muffins  (11/98)
Pine-Orange Oat Muffins make a hearty breakfast food or an excellent complement to a ham dinner. Like the Marmalade Oat Muffins, these are flavorful without butter or margarine. Since the dry ingredients are similar to the Marmalade Oat and Cran-Orange Oat Muffin recipes, I often make more than one variation at the same time.

Pumpkin Cheesecake (8/96)
This dessert achieves a creamy flavor by using low fat cream cheese and a small amount of whipping cream. The rich cookie crust balances out the calorie savings! (:>)

Pumpkin Pie (12/95)
I jokingly call this pie a "whole food." Not only is it delicious, but it also has all the food groups: vegetable (pumpkin), fruit (dates), protein (egg whites), dairy product (evaporated milk), starch (flour), and fat (vegetable shortening). Enjoy your guilt-free dessert!

This dessert tastes sinfully rich, but if you use nonfat sour cream, it's not half as decadent as it tastes!
